AppleMail is assumed to be the default mail app, and as long as it is then there will be no entry in the preferences file.
if the entry is changed then it will be filled out, if the default app is then later reset back to Mail, then it will get Mail in the entry for the default app.

My problem was that I couldn't find an entry because I never have changed from Mail as my default.app.
