You can but that would be too much work. Although I encourage you to continue learning AppleScript, the easiest way is to click on a PDF in the Finder and choose Get Info
In the Get Info window expand the Open With section

Choose Skim from the list and then click "Change All". All PDFs will then be opened with Skim.
