Hello Emile

You missed a Lion documented feature.

Keynote, Numbers, Pages, Preview and TextEdit are behaving according to Lion features.

They get benefit of AutoSave and Versions.
What you see is a feature of Versions.
When one of these applications documents remain 10 days with no change, it's flagged as Locked because the OS assume that it's a final version.
Of course, you may unlock it from its title bar as you saw.

Modified means that the doc was … modified.
As these flags aren't Finder's properties, it's normal that you don't find them.
To unlock the documents, you must click the … "Unlock" button.
You will see that the title bar will switch from azerty : locked to azerty : modified.

There is an other important change.
The File menu no longer contain a Save As… menu item.
