I just forgot a point, in fact the raison d'être for FileVault: the sparsebundle is encrypted.
So, when the user logs out, the image is unmounted, everything is put in its original place:
/Users/garcia/garcia.sparsebundle
and, provided the password is a good one, the user's home directory is fully protected, even if the box is lost or stolen.
Yes, details sometimes matter.
