The AppleScript Language Guide is the definitive reference for
AppleScript.
It's googleable.
There are several excellent books written on AppleScript, below is
a partial
list (from the AppleScript wiki page) the most recently released
first.
Since I know several of the authors, personally or cyberly, I won't
recommend any one over another.
