That sounds a bit as though you have access to a mail server that's pretty close.
I'm using pair.com for my mail and they allow me to set up filters at the SMTP level that interface with qmail. (That's a Q, not a G.). Everything is based on perl and you get every message passed to you as it arrives or after it's looked at by SpamAssassin. You get to put into any mailbox you want and you can do things like creating extra headers while you're at it.
qmail is sort of open source but you really can't change it. There are some fixes that you can make though. It's a real PITA to install in your own box. Sigh. There might be a binary around somewhere for BSD that would install on a Mac. It will NOT be AppleScriptable but it will live nicely with perl.
