I just Googled "Property List Editor" and found lots of nothing ... until a well hidden remark directed me to try the new Xcode 4.1 application in Lion's Developer folder.

If you drag & drop a .plist file onto the Xcode.app icon, it will open in Xcode. Solves that problem!

I also Googled ".lockfile", but found absolutely nothing. This may not have anything to do with this problem, but I want to know what they do.
