I'm a huge fan of SVN and the app called Versions (http://versionsapp.com) for the client to SVN.  I had some friends spend the time to teach me how to set up the server on the Mac and then I wrote a nice little "how to" document for setting up an SVN server on the Mac.  I'll look for it when I get home.
