but the voice pitch does not work with the new voices like lee - karen
samantha etc.

Q: are there new control commands for pitch and speed an modulation of
the new voices? Anybody have any info on this?"

Where can I find any documentation at all on these "new voices"?

This fails on my (Mountain Lion) setup:

say "some text" using "samantha" speaking rate 100

(also tried "Samantha", "Callie" etc) --- "Voice wasn't found"

But this works:

say "some text" using "Albert" speaking rate 160 modulation 50 pitch 50

modulation and pitch has to be a number between 0 and 100, rate has to be between 160 and 210 (to be comprehensible) I think
