There's a great little GUI freeware, SymbolicLinker, I've been using it for years .
Simple to use: Select a file in the Finder and from the Services menu click Make Symbolic Link. Then drag-n-drop the symlink where you want it. If you want it to have a keyboard shortcut use the Keyboard pane in System Prefs to add shortcut to its menu.
