Ok, now I'm clearer on the problem.
It's not when the user types into the field. Each field is updated properly when the user types.
The problem is when an item from the submenu of recent Find What or Change To choices is chosen. The find what field is not updated until either the user types a further edit into the find what field or a Find is run from the interface.
Likewise, and separately, for the change to fields.
Perhaps that's a bug (CS5.5). I haven't compared in other versions.

If they are inconsistent with the value of the find what and change to properties, I'm not sure how any scripted run of the Find/Change is going to do anything to change that, as that will make use of the out-of-date strings. A run in the interface would work, but that wouldn't that require System Events messiness (for what's possibly an edge case)?
