Is brew an option for you?
brew install pdfgrep
pdfgrep -ci “string” somefile.pdf
-c, —count -i, —ignore-case

it only counts the files containing it not the content, sorry
Have you tried Spotlight?
mdfind -count “sometext” -onlyin ~/somedirectory/
Not sure how you can limit it to search a single PDF but it should be fairly simple to move the file into an empty temporary directory beforehand
