The only attempt at a somewhat thorough guide to GUI Scripting that I know of is Lesson 28 ("GUI Scripting") of "AppleScript 1-2-3" (Peachpit Press 2009), written by Apple's Sal Soghoian and me. It is part of the Apple Training Series.
Both of those are a little out of date with respect to how you authorize accessibility in newer versions of OS X, but I assume you've already figured out how to do that.
Some sample GUI Scripting scripts from Apple may have been installed as part of your OS X installation at /Library/Scripts/UI Element Scripts.
You will also find some documentation in the Help book of my product, UI Browser, at < http://pfiddlesoft.com/uibrowser>. UI Browser is, among other things, an advanced scripter's tool for GUI Scripting, with capabilities going beyond those of Apple's UI Element Inspector (Accessibility Inspector).
