Yes, and no.
It goes to establishing value.
As a personal AppleScripter who ‘scripts more for fun/curiosity than profession, I’ve often wondered about my own rationale for paying for SD, and a lower price would certainly help me come to terms with that, but from LNS’s standpoint, keeping the bar reasonably high* ensures that the people using the tool are vested, interested users.
Imagine a world from LNS’s standpoint where every script kiddie and his dog pays $20, and overwhelms LNS with banal ‘support’ calls that likely hinge more about what AppleScript is/does/works and less about actual real problems with SD itself (which generally is pretty solid).
$200 is high enough that the people using it are likely experienced AppleScripters who already know their way around a good chunk of AppleScript's idiosyncrasies, who have outgrown Script Editor’s capabilities, and require less handholding.

* by ‘reasonably high’ I mean it’s no longer an impulse buy (like all the free/$0.99/$1.99 apps on your phone), but not so high that you consider it ‘enterprise’ software (e.g. $$$$$).
