That would be where Tex-Edit Plus comes into play, although it isn't free it has a much better scripting model.

Don't get me wrong, I used TextEdit for years to create read.me files but they were individual one-off files that didn't justify time spent writing a script. I moved on to something a bit more feature-rich just as soon as I could.
