How are you activating your script?
This task is very doable if a bit complicated to set up, and I've been using
the linked-to method for years up through macOS Sierra:

I've yet to see if it works on my "new" Mojave system but have no reason to
expect otherwise.
Catalina through Monterey I won't bet on without testing, but Apple has allowed
custom print-to files for decades.
This method drastically simplifies and speeds up the Print-to-PDF process and
allows for user defined destinations.
I use Keyboard Maestro <https://www.keyboardmaestro.com/main/> to drive mine,
but I see no reason FastScripts <https://www.red-sweater.com/fastscripts/> or
another AppleScript-runner utility couldn't do it.
