Well I've done some more testing, and it appears the problem is with the default compiler used by Xcode 4.4/4.5, Apple LLVM compiler 4.1. Switching the compiler to LLVM GCC 4.2 has, in the few tests I've run, fixed the problems with open/save/etc and the error messages.

4.5.1 fixes the Info tab (and property list editing generally).
