while your milage may vary (and may void the warranty), there is a firmware patch for the iBooks that enables both mirroring, as well as spanning of displays, giving it the same features as the PowerBooks. The firmware patch allows you to "install" and "de-install" the patch as needed for presentations. It appears that the feature was purposely disabled by Apple as part of the product placement strategy, to differentiate the iBook from the PowerBook.
I have been running the patch on one of my iBooks for a long, long time, without a problem. Prior to any OS upgrade I always disable the patch and then watch the mailing list for a few days.

The iBook does not support the use of a second screen display, such as a Keynote Presentation on the projector and the notes for the presenter on the iBook. (This was my definition of mirroring). Use a PowerBook for that.
If you are having trouble getting the projector to work, I would look at the projector as the trouble.
