while itsamac.com is great for individuals or small groups...

what we've been looking at is porting ALL of our email accounts off of an aging (and dying) FirstClass Server.

We have to move somewhere in the vicinity of 200+ email accounts...if we sued "itsamac.com" that'd be nearly $25/month

so I've found a couple of Linux and mac hosting services that are more flexible with accounts - providing gigs of storage and bandwidth and allowing as many email accounts as necessary [ so long as the storage and bandwidth are not exceeded ].

They are Lunarpages <http://www.lunarpages.com/> at $7.95/month prepaid one year
and others that don't advertise this, but will work with you on it
like Live Oak <http://www.liveoakhosting.com/> [linux and macs in Austin, TX]
and MacServe.net [all mac in Dallas, TX]

there are actually a LOT of hosts who use linux servers; most I've found are very inexpensive....

Where to host it...
itsamac.com is the biggest hosting co in the country using exclusively OSX Macs to host . They provide their biggest hosting package FREE to recognized Apple User Groups.  Worth looking into!
