The Mac Mini would suffice for many SOHO's particularly if the load
was light - say up to 10 users
I know of many small businesses that have file servers on "old"
machines like early G4 towers, B&W G3s and even some who are still on
old PPC PowerMacs - their needs aren't huge - just storage space and
they had already invested in the hardware and it still works ;)
Regarding server options, I tend to recall that there is a
presentation available on the ASW (if you have access) that covers
the features of Mac OS X server that may give you some ideas what can
be done with the Mac as a server - many of these features also live
in the "client" version of Mac OS X.
