Not having an actual Apple owned Apple Store near by (the closest is
at least 8 hours flight away ;) I can't speak from direct
experience... but I would say it may be best to visit in person
first... have a brief chat to find out who the manages the store...
discuss the concept briefly and get their contact details... DON'T
try and finalise it then and there... but then go home and put it all
in writing via email and then you all have it in writing as to what
each side expects etc.
