Yes, you can turn off the defaults, Gary. To turn off hyphenation for Pages, open the Inspector and uncheck Hyphenation.

So ... ol' AppleWorks will let you change the defaults, and Pages won't. I guess this isn't a bug, its a feature. Got it.
I'll pass the info on to our Editor. Its easy enough to do.
