This does it for the current page, but when I restart the app, and open a new page, the default is to auto-hyphenate again. My goal is stop this on all pages until I turn it back on again.

So ... ol' AppleWorks will let you change the defaults, and Pages
won't. I guess this isn't a bug, its a feature. Got it.
