If you use the same format, style, etc. repeatedly, save one of your Pages docs with all your preferred settings as a template. For easy access in the future, save it to Pages' My Templates folder. That way, when you open your template, you can create a new Pages document without having to change any of the settings although you can bypass them if you wish. HTH.

It may be that I'm the only one that thinks this is a problem (or desired feature) and if it ain't broke, they probably won't fix it. I've sent my 2¢ to http://www.apple.com/feedback/pages.html. We'll see if this can be remedied by Apple.
