Once you have opened the Inspector, and unchecked Hyphenation, save
the page as a template. Most people do not use that many different
templates. I have configured a blank template the way I most often
want it, and then saved a copy of the template as a template to my
desktop and moved into my Dock. Now I have a blank page, with
hyphenation unchecked where I can open it with one click.

This does it for the current page, but when I restart the app, and
open a new
page, the default is to auto-hyphenate again. My goal is stop this on
all
pages until I turn it back on again.

Yes, you can turn off the defaults, Gary. To turn off hyphenation for
Pages, open the Inspector and uncheck Hyphenation.
