Absolutely. You can export a mailbox in Apple Mail (folder of messages) by
right-clicking on it (Control-click) and choosing Export. Give Mail a
chance to respond and complete the desktop (it usually takes quite a while
-- very dependent on the number of messages).
And documents that you saved to the Finder are easily backed up to a Flash
drive, external drive, what have you. If you use a smart, syncing off-site
storage service (like DropBox, SugarSync, SpiderOak), it will sort out the
new vs. old documents for you.
