For share my experience:

- in the Mac App side you can use the HeartRateMonitor project full provided from Apple at this page (client): http://developer.apple.com/library/mac/#samplecode/HeartRateMonitor

- for the iPhone 4S iOS6 side I copy exactly the code shown in the WWDC2012 Video Session 705 - Advanced Core Bluetooth (server).
Unfortunately Apple not yet delivered this sample code in his portal.

I must say I'm still looking for a dongle adapter which works correctly on my OS X 10.8.1. I tried the following ones (not in the simulator but from a standalone mac app):

- IOGEAR GBU521W6 (Broadcom BCM20702A0). I have the following issues: unable to discover peripherals from a set of specified services, I have to scan for any services (I must pass nil to -scanForPeripheralsWithServices::). After the first connection and a successfull pairing are completed, if I disconnect and I try to reuse the address to directly connect to the peripheral it doesn't work. I know it's likely not a bug in my code because I tried between two iOS devices and everything works ok. Other than that, read and write requests usually succeed.
- CSR 4.0 (CSR, can't be much more specific on the chipset though, it appears with the following infos: product id: 0x0001, provider id: 0x0a12  (Cambridge Silicon Radio Ltd.). With this one I can't even connect to a peripheral it keeps looping while always rediscovering the same peripheral and never complete a connection.

Hope it helps. Of course, if peoples have better success with other dongles, please share.
