cocoa CAN run multiple instances of a single app using different users. but imagine if a user was running First Class or Fizzila and fast-switched. It would make it impossible for another user to use these apps.

Actually, what everyone is forgetting is that Quartz is a single-user-at-a-time windowing system. (Root doesn't count as a user in this situation).

If it were a multi-user-at-a-time window server, you could do what you're describing now with 'su'. You can't, because it isn't.
