http://nehe.gamedev.net has a bunch of very good tutorials for just about anything you would want to do with OpenGL. There is sample code for 20+ platforms, and the OS X code is all ready to build Cocoa projects. I haven't even found books that explain OpenGL as well as NeHe does.
