[regarding key/value coding]

My question is: how does anybody find out/remember these methods exist?

I found out about them by reading *all* of the documentation once through. As for remembering it, the Cocoa frameworks are pretty self-consistent, so my first guess as to the name of a particular method is usually right.

I keep looking in Project Builder for some sort of "Class Browser" which
will show me all of the methods (inherited or extended via protocols or
categories) that are available to a given class

We had it, and lost it. In NeXTSTEP, there was a program called "HeaderViewer" which did this, and that functionality was present in the previous incarnation of ProjectBuilder (now known as ProjectBuilderWO.) We've been told that Project Builder will regain this ability Real Soon Now.

Do you "old-timers" actually have all these things memorized??

No. All I have memorized is where to look.
