In addition to the OS X documentation, I recommend The CVS Book, which is online at http://www.red-bean.com/cvsbook. There's a section that explains how to setup a pserver using CVS. Just be aware that you need to either setup lookupd to look at the config files in /etc or instead of modifying those files, you'd need to use the Netinfo Manager to configure the services.
