How does one (using Cocoa) obtain a list of the running applications and their open windows? I can get a list of the processes with the unix or process manager api's, but how so with Cocoa?

There is no API in Cocoa for getting the list of running process. I'm afraid you will have to rely on UNIX or Carbon's Process Manager.
