New to cocoa and Interface Builder

I'm new to this. I'm doing some test, trying to make an application in cocoa-java that simple activates one of the menu
item and open a new window. First, where can I get real documentation about cocoa framework (app kit)?. I don't
understand how to access the menu items to enable disable the items?

Always in cocoa-java.
