One reason may be because gnutar only preserves metadata thought of 30 years ago. It may preserve permissions, chflags, and mtime, ctime, etc. However it won't preserve all Mac OS X metadata like creation date, comments, custom icon, etc.

tar is an anachronism anyway |-\
