Settings an explicit outgoing mailhost when using Message.framework

I can't rely on having a user environment set up appropriately (or
having easy access to the machine) to set the mailer settings in System
Preferences->Internet that Message.framework uses
Is there a method of forcing this to be a particular server? Perhaps by
setting a default in the app? (I'd like the value to be stored in the
app's config file if at all possible)
