1) Can a dock menu support images (icons) supplied by me?
Don't know, but would be interested to know

2) Can a dock menu support submenus?

Yes, it's a NSMenu, it supports sub menus

Check docklings for code on building application dock menus. It's basically the same stuff. Mine are on http://homepage.mac.com/cgodefroy/macosxdev
