I have an application that creates binary data files. What should the file
type be set to for these files?

Use file extension, like ".shoaibBinaryData" or whatever you like.

if I double click on any of
my data files, I get a dialog box saying there's no application associated
with the file.

Another problem might be that Finder is exceptionally lazy in taking into account new application's info: have you logged out/back?
