Seriously? I think ProjectBuilder is the best IDE I've ever used. Ranging from Emacs to MS Visual C++ to various Java IDEs.

If you need valium to deal with PB, and you want something simpler, try REALbasic. It's not Cocoa, but whatever.

If you want Cocoa without without the all the complexity, then maybe use Applescript studio.
