The F-script environment which lets you play with Cocoa objects dynamically has several examples of building windows and dialogs dynamically using simple messages - I think you could easily figure out from these examples how to do the same thing in the context of an application. F-script seems to be a great way to play with (and learn while playing with Cocoa interface objects). It's available here:
