Hi Evan (and welcome to Cocoa),

This was asked a while ago and I'll answer it the same way I did then...

I think you should dive right in. Make a few simplistic, yet challenging
apps and answer problems as you go. There are numerous resources out there
for you to answer your questions.

There are:
- The two popular cocoa lists (apple and omni)
- The archives and documentation (be sure not to forget these...)
- stepwise.com, cocoadev.com, cocoadevcentral.com and their own lists of
resources

After a short while, if not already, you'll see there are patterns and
standard methods to how things work. Objective-C is a very intuitive
language and very easy to pick up.
