Others have already mentioned the PDF stuff that Apple has available.
There are also some books on the subject. Just go to Amazon (or
whatever) and search for Applescript. I have three Applescript books
that I haven't managed to open yet, but I picked them because I liked
their descriptions:
AppleScript in a Nutshell - Perry/O'Reilly
AppleScript for Applications, Visual QuickStart Guide - Wilde/Peachpit
AppleScript for the Internet, Visual QuickStart Guide - Wilde/Peachpit
