As far as I know, the AppleScript Guidebook installers are meant to run in
the classic Mac OS (except for one recent module). But they're just HTML
files, for the most part, so you should be able to read them in any web
browser.
In addition to the Apple PDFs mentioned by others, Amazon.com or similar
will be happy to sell you a book about AppleScript. There are at least a
couple currently in print.
