I'll take a swing at this.
Making a living as a "programmer" or software engineer is
not so much about programming as it is about problem solving.
Good problem solvers can be successful with many different tools.
To the extent Cocoa allows one to deliver better solutions
in less time, it can be very good for making a living.
Even if you don't always use Cocoa, the experience gained
from it could pay off in solving other problems.
If or when Cocoa becomes more accepted, naturally there will be
more "jobs" for people with Cocoa experience, but this
is unlikely to be a significant factor for some time and
even if Cocoa does arrive, it will only be a short time
before it's replaced by the next fad.
Learning Cocoa is worthwhile to become a better problem solver.
Whether this tool can pay the bills depends on you.

simply turning Cocoa into the next open source community? open
source is great, but what about paying the light bill?
