Maybe I'm just a little confused, but why is it difficult to create a
disk image? If you're connected to a machine remotely via SSH or
something similar, you can use the hdiutil command-line tool to create
the images. Easy as pie - you could even create a shell script to do it
automatically.
Disk images are, bar none, the best way to distribute an app on Mac OS
X. If at all possible, you should use this method.
