contextual menu with unicode characters

I'm trying to create a contextual menu to let the user insert a number of special characters in a text. These characters are eastern european characters with carons.
How do I represent these characters in a plist? If I just put the characters and encode as unicode, the menu does not work.
If I use backslashes with a decimal code, it also does not work.
