Thanks Ali. For the benefit of the archive, the code I've used (in my NSDocument subclass's -init method) is this:

It's actually better to register defaults much earlier than this. For instance, NSDocumentController might decide to read the default value before your NSDocument subclass has been registered and has had a chance to register it. Typically a good place to do it is the +initialize method of the class which looks for the defaults; and usually it's more practical to just collect these in the +initialize method of your NSApplication subclass.
