Which String Encoding should we use/suggest

I see a lot of "Mac OS Roman" floating around, but NSASCIIStringEncoding is most used in examples. Also, NSASCIIStringEncoding is suggested as one of the "most used" in the docs, but NSMacOSRomanStringEncoding is not. So, my question is, which one should we have as a default. Also, what is NSASCIIStringEncoding's string name, like NSMacOSRomanStringEncoding is "Mac Roman" or whatever.
