For example i'd like to know the methods I can use on an NSString
(concatenating, converting, extracting a part of the string, length,
). Where can I find them?

There's a 'Finding Documentation' item in Project Builder's Help menu
that gives you a brief description of the basic features like option
double click.
Another good start is Help -> Cocoa Help and there the 'Programming
Topics'.
If it's Objective-C rather than the Cocoa API you're after, look at
Help -> Cocoa Help and there 'The Objective-C Programming Laguage'
under 'Getting Started'.
The Cocoa API can seen overwhelming, but usually the 'Programming
Topics' get you to a good start. I apologize if any of this is too
basic.
