option double click on NSString in any editor to go to the NSStrings class documentation. There, under 'Method Types', you will find a method listing ordered by topic.

Also, check out 'Strings' under 'Data Management' in 'Programming Topics' (this is also cross linked on the NSStrings class description).

There's a 'Finding Documentation' item in Project Builder's Help menu that gives you a brief description of the basic features like option double click.

Another good start is Help -> Cocoa Help and there the 'Programming Topics'.

If it's Objective-C rather than the Cocoa API you're after, look at Help -> Cocoa Help and there 'The Objective-C Programming Laguage' under 'Getting Started'.

The Cocoa API can seen overwhelming, but usually the 'Programming Topics' get you to a good start. I apologize if any of this is too basic.
