An interesting question I have concerns the Toolbar customization
in Mail.app: in the Finder, I can shift click on the little "top-left
widget" in the title bar to customize the toolbar. In mail, I have
to go to a menu.

To customize toolbar in an application, you can click the toolbar
button with command and option pressed. The Finder use shift since 10.0
but I don't know why(perhaps because it use its own set of functions
to manage the toolbar well it's not really a reason well, Apple is
not very consistent with UI implementation).
